Abstract:
RESUMO: Com a realização desta pesquisa objetivou-se avaliar a influência do tipo de silagem
sobre a composição tecidual, características físico-químicas e o perfil de ácidos
graxos da carne de ovinos terminados em confinamento. No Cap. I foi feita uma
revisão integrativa, em que as buscas para a seleção dos artigos foram realizadas
nas bases: SCOPUS, Web of Science, Wiley Online Library e Science direct. Para
tanto, usou da estratégia de pesquisa a mnemônica PVO (population, variable of
interest, outcome) para então definir a pergunta norteadora da pesquisa: “Quais as
principais silagens usadas na terminação de ovinos?”. No Cap. II, foi conduzido
um experimento com 32 cordeiros mestiços, machos, com peso inicial médio de
±19,6 kg terminados em confinamento, alimentados com silagem de ração em
mistura total (SRMT) contendo pornunça (Manihot sp.). Os animais foram
distribuídos em um delineamento de blocos completos casualizados, em arranjo
fatorial 2 × 2, sendo duas formas de fornecimento (FF; SRMT e RMT) e duas
relações volumosos:concentrado (V:C 40:60 e 50:50). Os dados foram analisados
usando modelos mistos, sendo os tratamentos e suas interações considerados
efeitos fixos e os efeitos de bloco e o erro experimental, efeitos aleatórios. As
médias foram comparadas pelo teste ajustado de Tukey, sendo consideradas
diferentes quando P ≤ 0,05. A revisão integrativa revelou que o Brasil foi o país que
mais desenvolveu estudos sobre o tema, sendo a silagem da planta de milho a mais
utilizada como fonte de volumoso na alimentação de ovinos confinados. De modo
geral, o uso de diferentes silagens nas dietas exerce influência direta sobre a
qualidade da carne de cordeiros confinados, a composição tecidual,
características físico-químicas e ainda o perfil lipídico. Em relação ao Cap. II,
as dietas ofertadas na forma de RMT proporcionaram maior peso da perna (P =
0,02), independentemente da relação V:C. Observou-se que a dieta com
SRMT40:60 apresentou maior proporção de ossos (O) em comparação à
RMT40:60. As proporções dos demais tecidos (M = músculo; G = gordura e outros
tecidos) não foram influenciadas (P > 0,05) pelas dietas. O índice de
musculosidade, bem como as relações M:O e M:G também não apresentaram
diferença significativa (P > 0,05). As dietas não influenciaram a composição
centesimal da carne (P > 0,05). Os maiores valores para L* (luminosidade) e perdas
por cocção (PPC) foram observados na relação 50:50 em comparação à relação
40:60. As demais características físicas não foram influenciadas pelas dietas (P >
0,05). Os animais alimentados com SRMT, independente da relação V:C,
apresentaram carne com maior concentração de C15:1 e C18:3 n-3 comparados
aos alimentados com RMT. A relação V:C de 40:60 proporcionou carne com maior
concentração de C20:2. Os demais ácidos graxos não foram influenciados pelas
dietas (P > 0,05). Assim, com base nos resultados conclui-se que a Pornunça pode
ser utilizada com segurança como fonte de volumoso tanto na forma de SRMT
quanto na forma de RMT, nas relações V:C de 40:60 ou 50:50, sem prejuízo à
qualidade da carne. ABSTRACT: The objective of this research was to evaluate the influence of silage type on the
tissue composition, physicochemical characteristics, and fatty acid profile of lamb
meat from animals finished in confinement. In Chapter I, an integrative review was
carried out, in which the searches for article selection were conducted in the
databases: SCOPUS, Web of Science, Wiley Online Library, and ScienceDirect.
The mnemonic PVO (population, variable of interest, outcome) research strategy
was used to define the guiding question of the study: “What are the main silages
used in the finishing of sheep?”. In Chapter II, an experiment was conducted with
32 crossbred male lambs, with an initial average weight of ±19.6 kg, finished in
confinement and fed with total mixed ration silage (TMRS) containing pornunça
(Manihot sp.). The animals were distributed in a randomized complete block design,
arranged in a 2 × 2 factorial scheme, with two feeding forms (FF; TMRS and TMR)
and two forage-to-concentrate ratios (F:C 40:60 and 50:50). Data were analyzed
using mixed models, with treatments and their interactions considered as fixed
effects, and block and experimental error as random effects. Means were compared
using Tukey’s adjusted test, and differences were considered significant when P ≤
0.05. The integrative review revealed that Brazil was the country with the highest
number of studies on the topic, and corn plant silage was the most used roughage
source in confined sheep feeding. Overall, the use of different silages in the diet
exerts a direct influence on lamb meat quality, tissue composition, physicochemical
characteristics, and lipid profile. Regarding Chapter II, the diets supplied in the form
of TMR resulted in higher leg weight (P = 0.02), regardless of the F:C ratio. The diet
with TMRS40:60 showed a higher proportion of bone (B) compared to TMR40:60.
The proportions of the other tissues (M = muscle; F = fat; and other tissues) were
not affected (P > 0.05) by the diets. The muscularity index, as well as the M:B and
M:F ratios, also showed no significant differences (P > 0.05). The diets did not
influence the proximate composition of the meat (P > 0.05). Higher values for L*
(lightness) and cooking losses (CL) were observed for the 50:50 ratio compared to
40:60. The other physical characteristics were not affected by the diets (P > 0.05).
Animals fed with TMRS, regardless of the F:C ratio, showed meat with higher
concentrations of C15:1 and C18:3 n-3 compared to those fed with TMR. The 40:60
F:C ratio resulted in meat with a higher concentration of C20:2. The other fatty acids
were not affected by the diets (P > 0.05). Thus, based on the results, it can be
concluded that pornunça can be safely used as a roughage source, either in the
TMRS or TMR form, with F:C ratios of 40:60 or 50:50, without compromising meat
quality.
